Baked Sweet Potato Hash Browns: Suitable for 11 month old baby & up
A crispy, golden treat that’s packed with nutrients and comes out irresistibly delicious! This kid-friendly snack idea are made with 3 simple ingredients, are gluten-free and dairy-free. My family likes to make them around Hannukah for a healthier potato latkes option. Usually hashbrowns are deep fried in oil, these are lightly sprayed in oil and baked to golden perfection. The sweet potatoes give a beautiful, sweet flavor that kids enjoy and you can pair it with a fun dip to make mealtime more engaging. On Hannukah it’s traditionally paired with unsweetened applesauce or sour cream, but you can pair it with ketchup, honey mustard or some plain yogurt for younger babies.

Ingredients & Substitutions:
Sweet Potato- Sweet potato is the star of the show, you can use normal sweet potato or a red sweet potato.
Egg- I haven’t tried replacing the egg in this recipe, but I know some moms have had success with mixing some flour with milk or non-dairy milk and making a paste.
Gluten-Free Flour- I used gluten-free flour for this recipe, but you can use all-purpose, white spelt or whole wheat.
Avocado Oil Spray- You can use any neutral oil spray

Preheat oven to 400F

Grate sweet potato

Add egg, gluten-free flour and combine everything together

On baking tray add parchment paper and spray it with the oil

With two tablespoons scoop up some of the hashbrown mixture and make individual hashbrown circles Should come out around 8 hashbrowns

Spray the top of the hashbrowns with oil and bake for 13-14 minutes I like to flip them after 10 minutes so the other side can get a nice golden color and add back to oven for the remaining 3 minutes

Serve along side applesauce or yogurt & enjoy!
