TIP: This soup freezes really well, when heating up add a little more water to it, to thin it out.

Green Lentils: I prefer green lentils in this recipe, but you can use red or yellow lentils as well.
Chicken Breast: Can be substituted for another part of the chicken, like boneless chicken thighs.
Carrot, Celery, Garlic: I don’t recommend substituting the carrot, celery and garlic in this recipe.

Add olive oil to medium size pot

When hot add chicken and sear for a few minutes on each side

Add turmeric, cumin, black pepper and mix

Add garlic and roast for a minute (garlic burns easily so be careful, no longer than 1 min)

Add carrots, celery, lentils, cilantro and mix

Add water or broth and bring to a boil

Cover on medium heat for 40 min Check throughout cook time to make sure you don't need to add more liquid
