Simple to make and full of wholesome ingredients, these fluffy almond flour pancakes are a great way to ensure your baby enjoys a healthy and delicious start to their day. They are freezer-friendly and when ready to eat, just pull 1-2 pancakes out, heat up for about 30 seconds and voila! Easy, quick, healthy breakfast for busy days.
Why Fluffy Almond Flour Pancakes?
This recipe is so easy and simple to make, it takes about 15 min for everything to come together. Substitutions:
Bananas- You can replace with another sweet fruit, like apple or pear puree
Eggs- Can be replaced with a plant-based egg alternative
Almond Flour- This is the star of the show, I don’t recommend replacing it with another flour
Coconut Oil- Can be replaced with another cooking oil or butter
What you need:
A non-stick pan, I recommend the non-toxic, made with no PFAS Our Place Pan. The pancakes come out amazing every time.

Ingredients

Mash banana in a bowl

Add eggs and whisk

Add almond flour, baking powder and mix everything together

Set batter to the side for 10 min

Heat up pan with coconut oil

Add your pancakes and cook each side on low heat for a few minutes Almond flour can burn very easily so make sure to cook on low heat flipping after 2-3 minutes
