One Pot Lentils and Rice

This recipe is for 11 month old baby & up

A one-pot lentils and rice dish comes out so good and is made with clean, healthy, minimal ingredients and a wonderful meal for you and baby to share. This recipe is a nutritious and comforting option that’s simple to prepare that can be served for lunch or dinner. If your toddler or little one’s vegetarian or vegan, this is a must try dish! It is allergen friendly, nut-free, dairy-free, gluten-free and egg-free. Lentils are packed with protein, iron, B Vitamins, magnesium and fiber, while rice provides a gentle base that’s easy on a baby’s developing digestive system.

This wholesome dish can be cooked in one pot, making cleanup a breeze for busy moms. The mild flavors are ideal for introducing babies to solid foods, and the meal can be easily customized with various vegetables or mild spices to suit both mom’s and baby’s tastes. Whether served as a puree for younger babies or with a little texture for older ones, this dish provides essential nutrients while saving time in the kitchen. I like to top it off with some avocado, parmesan cheese or some croutons.

 

If you’d like to serve this to 6+ months all ingredients are safe, you can blend into a yummy smooth puree or hand blend and leave a little texture.

You can make this in a crock pot or in a pot over the stove.

 

Substitutions:

Rice: I like to use long-grain white rice, but you can use jasmine rice, basmati rice, brown rice, quinoa or whatever you prefer.

Green Lentils: Green lentils go really well with this recipe, but you can substitute with red lentils if that’s what you have on hand.

Olive Oil: You can substitute the olive oil with avocado oil or any neutral oil.

Ingredients

Adjust Servings
1/3 cup green lentils You can sub with other colored lentils but I recommend the green ones for this dish
2 tbsp white rice
1 carrot
1 celery
2 garlic cloves
1/2 tsp turmeric
1/2 tsp cumin
Pinch of black pepper
Salt to your liking (omit for younger babies)
Olive oil for cooking

Directions

Wash and soak lentils and rice while prepping veggies (for at least 15 min)
Mark as complete

Chop garlic, carrot and celery
Mark as complete

Add olive oil to heated pan
Mark as complete

Add garlic, carrot, celery, turmeric, cumin, salt, pepper and sauté for 3 min to bring out the flavors

Add 2 cups of water and bring to a boil
Mark as complete

Add lentils with rice and mix
Mark as complete

Cover on low-medium heat for 45 min until everything is cooked through and soft
Make sure to see if you need to add more water throughout cook time (I had to add 1 more cup)

Notes

Storage instructions- can refrigerate for 4 days or freeze for up to 1 month
