Spinach Potato Tots- suitable for 7 month baby & up

Spinach potato tots are a healthy, convenient, and delicious way to introduce vegetables and textures to your baby while fostering independence through baby-led weaning (BLW). They are so easy to prepare, made with just 3 simple ingredients! Potato, spinach & cheese! Packed with greens, creamy potatoes, and the savory richness of cheese, these tots are crispy on the outside, soft on the inside. They are easy for babies to chew and a great BLW recipe or for little one’s that are transitioning from puree’s to solids. These delicious bites are freezer-friendly, and versatile enough to serve as a snack, lunchbox addition, or even a fun appetizer at gatherings.

What you need:

Ingredients & Substitutions:

Potato- The potato is the base of the tot. I recommend using a large russet or Idaho potato. If you have small potatoes use two instead of one.

Spinach- You can replace with kale. I haven’t tried using frozen spinach, but I believe it will work, just make sure to steam it with potato.

Cheese- I used shredded mozzarella in this recipe, since it is naturally lower in sodium. You can use any cheese you prefer. For a dairy-free option try adding 1-2 tbsp of flour, but there won’t be much flavor, I would recommend adding some seasonings, like nutritional yeast to replicate a cheesy flavor. Ingredients

Directions

  1. Cut potato into large pieces and steam, with spinach for 15 minutes till soft
  1. When ready add to bowl and mash well
  1. Add cheese and mix
  1. Add parchment paper on baking tray and start forming your tots Roll into cylinder like shapes and spray or brush with oil
  1. Bake for 15 minutes on 400F After 10 minutes of baking flip the tots and cook for additional 5 minutes
  1. Cool for 10 minutes & serve!
