If you are looking for easy breakfast ideas for babies, toddlers or even adults you have to try these yummy Sweet Potato Pancakes! Suitable for 7 month baby & up! They are incredibly easy to make, by steaming a sweet potato, putting everything in a blender and blend. Made with a few wholesome ingredients that you probably have in your kitchen right now!

 

These baby pancakes come out very soft, perfect for little one’s just starting solids or practicing baby-led weaning (BLW). They are easy to eat, gentle on the tummy and not to mention so flavorful! Packed with vitamins, minerals, and fiber, this recipe combines two powerhouse ingredients, sweet potatoes and bananas into a meal that’s as nutritious as it is enjoyable.

 

Why Sweet Potato Pancakes?

-They are made with a few ingredients, easy to whip up for a healthy, yummy breakfast that your children will enjoy.

Substitutions:

Egg- Can replace with plant-based egg alternative or flax egg. For flax egg add 1 tbsp ground flaxseed with 4 tbsp water and let sit for 15 minutes till thick.

I don’t recommend replacing any other ingredients for this recipe.

 

What you need:

A steamer and blender- I use a baby cook to make things easier, it has all in one steamer and blender.

Non-stick pan– Our Place non-stick non toxic, made with no forever chemicals is amazing for pancakes.

Directions

  1. Steam 1 sweet potato for 15 minutes
  1. Mash and add 3/4 cup to blender, along with banana, egg, oats, vanilla, cinnamon, baking powder and blend till smooth If you have a larger banana I recommend using about 3/4 of it. Mixture will be thick
  1. Add a little butter or coconut oil on heated pan and start making your pancakes
  1. Cook pancakes for 3-4 minutes on each side on medium heat
  1. Serve along side yogurt and berries & enjoy!
