What do you need:

A steamer

A small blender

Air fryer preferred, but can use oven

 

Substitutions:

Potato- Can be swapped for sweet potato

Zucchini and Carrot- I don’t recommend changing these veggies in the fritter

Flour- Can use any flour of choice to help bind the fritter together, for example all-purpose, whole wheat, spelt, gluten-free, oat flour

Ingredients

Directions

  1. Steam potato and carrot for 15 min
  1. In the meantime grate zucchini and squeeze out excess water
  1. When ready add zucchini, carrot, potato to mixing bowl and mash all together
  1. Add flour and mix
  1. Form circles with a little olive oil in between your hands and add to baking tray
  1. Add to airfryer for 10 min on 400 F or to oven for 10-15 min on 400 F
  1. In the meantime make your dip- add sour cream, avocado, almond milk, garlic powder, dried dill to small blender and blend
  1. Plate your fritters with dip and enjoy
