Every summer I seem to end up with a few peaches sitting on my counter that become just a little too soft before we can eat them. Instead of letting them go to waste, I gently stew them with cinnamon and a little date syrup until they’re soft, naturally sweet, and almost jam-like. Ingredients

2 peaches (peeled & diced)
1-2 tbsp date syrup or sweetener of choice
1/2 tsp cinnamon
3 tbsp instant oats
1 tbsp chia seeds
1/2 cup milk or non-dairy milk
1 tbsp full fat plain yogurt
Optional-
1 tbsp lemon juice

Peel and dice peaches

Add the diced peaches, cinnamon, and date syrup to a small saucepan. Add a splash of water and cook over low heat for 10 min, covered, stirring occasionally, until the peaches are very soft and jammy. If you'd like a smoother consistency, lightly mash them with the back of a spoon
Add lemon juice if you are planning to store in fridge for longer than 2 days. Adjust sweetness to your liking.

In a bowl or directly in two jars, combine oats, chia seeds, milk and yogurt. Stir well until everything is evenly mixed
