If you are in the early stages of introducing solids, this zucchini and potato puree is a wonderful choice to start with. Two of my favorite vegetables blended into a creamy, tasteful, healthy meal for your little one. It offers a gentle introduction to healthy fats and a variety of textures. Zucchini is rich in vitamins A and C, potassium, and fiber, while potatoes provide carbohydrates, potassium, and vitamin C. A small amount of olive oil adds healthy monounsaturated fats, which are important for brain development and overall growth.

Ingredients

Adjust Servings
1/2 Potato Can be gold, Idaho or Russet
1/2 Zucchini
1 oz. Steamed water
Drizzle of Olive Oil

Directions

1.

Step 1

Wash, peel and cut potato and zucchini
Mark as complete
2.

Step 2

Steam for 15 min
Mark as complete
3.

Step 3

When ready add to blender with steamed water and blend
Mark as complete
4.

Step 4

Drizzle with a little olive oil
Mark as complete
