Broccoli Cauliflower Cheese Muffins

The tastiest savory muffins I ever did try!

These broccoli cauliflower cheese muffins are packed with so much goodness and so easy to prepare, combine all your ingredients and pop in the oven for 20-25 min and you have these soft, fluffy, delicious, healthy, savory muffins. These can be served for breakfast, lunch or can be given as a snack option with some fruit on the side. I love to meal prep these and have them in the freezer and ready to go!

    • Broccoli and Cauliflower: Provide essential vitamins and minerals such as vitamin C, vitamin K, folate, and fiber. These nutrients support immune function, bone health, and digestion.

Broccoli Cauliflower Cheese Muffins

Ingredients

Optional- shredded mozzarella on top

Directions

  1. Steam broccoli and cauliflower for 15 min
  1. When ready mash in a bowl
  1. Add eggs and cottage cheese and mix
  1. Add oat flour and mix everything together
  1. Brush or spray bottom of muffin tin with a little oil and pour mixture I used 12 cup muffin tin
  1. Sprinkle some mozzarella on top
  1. Bake on 350 F for 20-25 min
  1. Let cool and serve
