Pasta- You can use any pasta you prefer, like semolina, brown rice pasta, chickpea pasta, etc.

I don’t recommend substituting any other ingredients in this recipe.

One Pot Carrot Pea Pasta

Directions

  1. Dice onion and carrot
  1. Heat up medium size pan with olive oil
  1. Add onion, turmeric, salt, pepper and sauté for a few min till golden brown
  1. Add carrots, peas and 2 cups of water Depending on stove you might need to add 1 more cup of water through cook time
  1. Bring to a boil and cover on medium heat for 25 min
  1. Once ready half or all of the peas and carrots with 1 more cup of water
  1. Pour back into pot and add noodles
  1. Bring to a boil, reduce to low-medium heat and cook for additional 8 min
  1. Let cool and serve as is or with a little parmesan cheese
