I love a good healthy snack that I can easily make, with a few simple, clean ingredients and these Carrot Oat Cookies do not disappoint! These cookies are made with just 4 ingredients and are a wonderful treat to have for those busy days or a grab and go snack throughout the week! They are such a fun, tasty treat, that babies, toddler or older kids can enjoy. These cookies come out really flavorful, soft and are allergen-friendly. Made with no gluten, egg-free and dairy-free. They are great for meal prepping and having in the freezer, when ready to eat take out and heat up in the microwave for a few seconds (do not overheat) or thaw.

Substitutions:

Oat flour: I don’t recommend substituting the oats in this recipe

Carrot: You can try adding another veggie like shredded zucchini or mashed steamed sweet potato

Banana: Can replace with applesauce

 

What you need:

Steamer to steam carrot

Blender to make your oat flour

Carrot Oat Cookies

Ingredients

Directions

  1. Steam or boil carrot for 15 min
  1. Add to bowl with banana, peanut butter and mash and mix everything really well
  1. Add oat flour and mix
  1. Scoop with spoon and onto baking tray I recommend putting parchment paper so it doesn't stick to baking tray
  1. Bake for 8-10 min on 350 F
  1. Let cool for 10 min & serve

    Hello Natalie! I refer to your website on a very regular basis for most of my toddler’s snacks. He has loved most of them so far! I hope it’s okay to give you some feedback of my experience so far. I find that the recipes where you include pictures of each step in the instructions are a lot more helpful. Because sometimes it helps me to know if what I am doing looks like what it’s supposed to look like, especially when I am making something for the first time. Secondly, it would be super helpful to have more details such as how thick do we make the cookies out to be on the parchment paper before they go into the oven: roughly half an inch or quarter of an inch, for them to be done in 8-10 minutes? Anyway, these are some of the feedback I had to make your website even more enticing! But my little one has been loving your recipes and it makes me a happy mama, so thank you for all that you do!
