This recipe is for 7 month baby & up

Spinach Oat Pancakes is a classic when starting solids and these ones come out so soft and delicious, I even like to eat some myself. This simple baby breakfast idea are made with 5 healthy ingredients and all in all take about 10-15 min to prepare. These pancakes are made by blending oats and fresh spinach with egg, a ripe banana to create a smooth, green batter. Cooked in mini, baby-friendly sizes that are perfect for little hands to grasp and explore.

The oats provide essential whole grains and fiber, supporting digestive health, while the spinach adds a boost of vitamins A, C, and K, as well as iron and calcium. The banana naturally sweetens the pancakes and offers additional vitamins and potassium. These spinach oat pancakes are soft and easy to chew, making them ideal for babies who are just starting on solids or practicing baby-led weaning (BLW). TIP:

I like to put the leftover pancakes straight in the freezer once cooled and heat up for about 30 seconds in the microwave before serving. This is an excellent, quick meal-prep recipe. Best served with a little fruit, fruit puree or a side of yogurt, YUM!

 

Substitutions:

Oats: I used rolled oats, you can use instant oats as well

Banana: Try swapping with another sweet fruit like apple or pear

Egg: Substitute with 1 flax egg- create by adding 1 tbsp flaxseeds with 3 tbsp of water and let it sit for 15 minutes

Spinach: You can substitute with kale

 

What you need:

A good non-stick pan, I like to use my non-toxic Our Place pan.

Directions

  1. In a blender add banana, spinach, oats, egg and baking powder and blend
  1. Add butter or coconut oil to heated pan and start adding pancake batter
  1. Cook pancakes on each side for 3-4 min, make sure to lower heat since they can burn easily
  1. Cool & Serve!
