Substitutions:

Spinach: Can be replaced with kale

Ricotta: Can be replaced with cottage cheese or farmers cheese

Garlic: Can be replaced with 1/4 tsp garlic powder

Pasta: You can use any pasta you like, gluten-free pasta, red lentil pasta, chickpea pasta, brown rice pasta, etc.

Any small blender will work fine to blend up the sauce

Ingredients

Adjust Servings
3/4 cup small pasta
1 cup spinach can be fresh or frozen
1-2 garlic cloves
2 tbsp ricotta cheese
Splash of reserved pasta water
Olive oil for cooking
Salt to your liking

Directions

Boil water and cook pasta for 8-9 min, until tender
Mark as complete

In the meantime, add olive oil to heated pan
Mark as complete

Add spinach, garlic cloves and cook for a few minutes till spinach is wilted

When ready add cooked spinach and garlic to blender, along with ricotta cheese, pasta water and blend till smooth

Add salt and mix sauce with pasta

Notes

Storage instructions- can refrigerate for up to 3 days or freeze for up to 1 month
