We love this yummy One Pot Yellow Rice & Veggies, ready in 20 minutes! You throw all your ingredients in your rice cooker and is cooked to perfection every time! Comes out very soft and is excellent for baby and toddlers. This dish is versatile, you can add whichever veggies you have at the moment, fresh or frozen. For example peas, zucchini, broccoli, cauliflower, carrots, corn, green beans, the possibilities are endless! For this recipe I chose peas, zucchini, riced cauliflower, garlic, seasoned with a little turmeric, which has strong anti-inflammatory and antioxidant properties, and giving the rice a beautiful yellow tint. This recipe is a staple at our house, it is so convenient, easy, almost no effort and comes out delicious every time. This healthy dish is allergen friendly, vegan, nut-free, gluten-free, egg free and dairy free. It is an easy, quick lunch or dinner option, you can pair it with your favorite protein, it goes great with almost everything, chicken, fish, shrimp, beef or add a scrambled egg to it. I try to make it once a week, so the kids get exposed to eating veggies with their meals and it’s good knowing they are getting lots of healthy vitamins and minerals.
All the ingredients are safe for 6+ months so if you’d like to serve it to younger babies you can, but I recommend blending or mashing the rice and veggies together.
If you don’t have a rice cooker you can cook the rice and veggies in a medium size pot over the stove, more cook time might be needed.
Substitutions:
White rice: You can use any white rice you prefer, long-grain, jasmine or basmati
Veggies: Again you can have fun with this and add whatever fresh or frozen veggies you have on hand or prefer

Wash rice and prepare veggies

Add rice to rice cooker along with garlic cloves, zucchini, peas, cauliflower, olive oil, turmeric, salt, pepper and mix

Serve as is or mush veggies and rice together
