Broccoli cheddar risotto is a creamy, comforting dish that’s perfect for introducing your baby to new textures and flavors. This baby-friendly version of a classic risotto combines the mild taste of broccoli with the rich creaminess of cheddar cheese, creating a wholesome and nutritious meal that babies, toddlers, and even older children will love. If you have a little one or toddler that’s not really into veggies, try making this recipe for them. There is a whole head of broccoli in it and they won’t be able to tell. I love it’s vibrant, green color, making things fun. Try giving it a funny name, like Monster Rice. It’s made with simple ingredients, and a great way to offer your little one a balance of protein, fiber, and healthy fats in a soft and easy-to-eat dish. This Broccoli Cheddar Risotto is very simple to make, made with just a few ingredients, way easier than a traditional risotto recipe and not to mention incredibly delicious!

 

The rice is tossed with grass-fed butter and cooked in broth, until nice and creamy. Once ready you top it off with a broccoli puree, and add some yummy shredded cheddar cheese. Mixed into a perfect lunch or dinner dish that the whole family can enjoy together. It can be served as a main dish or a side dish with your favorite protein. Hope you enjoy it as much as we did!

 

Substitutions:

Rice: I used Risotto Rice for this recipe, called Arborio Rice. You can use regular white long-grain or short-grain rice instead.

Broccoli: This recipe goes very well with the broccoli, but if needed you can replace with cauliflower.

Cheddar Cheese: You can use whichever shredded cheese you prefer, but I do recommend shredding it yourself rather than buying pre-packaged shredded cheese, it really makes a difference!

Broth: You can use a chicken broth, bone broth or veggie broth for this recipe.

 

What you need:

2 medium sized pots– 1 for the risotto and 1 for boiling the broccoli

Ingredients

Directions

  1. Wash your rice and put to the side
  1. In a medium size pot heat up broth and in another pot boil water for broccoli
  1. Once boiling, add broccoli and slightly cover for 20 minutes on medium heat
  1. Add butter to a deep pan or pot and add rice (coat rice in the butter)
  1. Pour broth over rice, cover and cook for 25-30 minutes until soft on low-medium heat Check throughout cook time to make sure liquid hasn't dissipated
  1. When broccoli is ready add to blender with some of the boiled water and blend into a nice puree I didn't measure how much water, but around 1/3 cup of water
  1. Add broccoli puree to rice and stir
  1. Add garlic powder, along with cheddar cheese and stir
  1. Serve & Enjoy!
