Why Healthy Breakfast Cookies for Kids?
-These cookies are incredibly convenient and easy to make. They are best for busy mornings or on the go snacks.
-These yummy bites are vegan, egg-free, gluten-free and dairy-free.
-The cookies have a soft, chewy texture, making it easy for little one’s to eat.
-They are very healthy and nutritious! The oats provide slow-digesting carbohydrates to sustain energy throughout the morning, while nut butter or seeds offer protein and healthy fats to support growing bodies. Adding fruits like bananas and berries boosts the vitamin and mineral content. The chia and flaxseeds are rich in Omega-3 fatty acids, fiber, calcium & more!
Kid-Friendly Customizations:
The beauty of these breakfast cookies is that they are very adaptable. For the oats I recommend using instant oats, since it is thinner in texture, but you can use rolled oats.
I used almond butter for this recipe, but you can swap it with any nut or seed butter of preference, like peanut butter or sunflower seed butter.
For older kids you can add a chocolatey twist, add a sprinkle of cocoa powder or dark chocolate chips. If your child loves crunch, toss in chopped nuts or seeds. Either way they came out delicious!
Substitutions:
Almond butter- Swap for any nut or seed butter, for example peanut butter, tahini, cashew butter or sunflower seed butter.
Flaxseeds & Chia seeds – Can omit if you don’t have
Oats- I don’t recommend changing the oats in this recipe
Bananas- You can use another sweet fruit, like pear or apple.
Berries- I used strawberries and blueberries, you can substitute with any berries you prefer or for older kids chocolate chips.
