Orange Carrot Muffins for Kids: A Wholesome, Healthy Snack Idea for 12 months & up

Orange carrot muffins are a delightful and nutritious snack that kids will love. Combining the natural sweetness of carrots with the zesty flavor of oranges, these muffins are a perfect way to sneak more vegetables into your child’s diet while satisfying their cravings for a treat. Moist, fluffy, and lightly sweetened with honey and no refined sugars. They make an ideal option for breakfast, lunchboxes, travel snacks or an afternoon snack.

    I recommend making these in a small muffin tin (comes out about 22 muffins). Their small, handheld size makes them a convenient snack that kids can enjoy at home or on the go. You can make them once a week for a meal-prep snack and freeze them to have throughout the month.

 

Ingredients & Substitutions:

White Spelt Flour- This can be replaced with all-purpose or white whole wheat flour.

Orange Juice- I recommend squeezing fresh oranges, it gives a lot more flavor to the muffin. If you only have bottles orange juice it will work as well.

Orange Peel- Do not omit the orange zest, it is needed in this muffin.

Carrot- I haven’t tried replacing this with another vegetable, the carrot works really well here.

Egg- Can replace with flax egg or plant based egg alternative. For flax egg mix 1 tbsp ground flaxseed with 3 tbsp water and let sit for 15 minutes.

Whole milk Yogurt- For a dairy-free option, replace with non-dairy yogurt of choice.

Honey- The honey can be substituted with maple syrup, both for 12 months & up. If you are making this muffin for younger than 12 months you can omit the sweetener all together.

Avocado oil- Any neutral oil will work in this recipe or melted butter.

Directions

  1. Preheat oven to 400F
  1. Squeeze orange juice and grate carrot, set to the side
  1. In a mixing bowl add egg, orange juice, whole milk yogurt, honey, avocado oil, vanilla and mix
  1. Add in grated carrot
  1. Add dry ingredients, white spelt flour, baking powder and orange zest and fold in Do not overmix
  1. Spray or brush muffin tin with oil and add batter
  1. Bake for 15-17 minutes For larger muffin tin add 3 more minutes or until toothpick comes out clean
  1. Let cool for 15 minutes & enjoy!

    YUM! I did 1/3 cup maple syrup and found it plenty sweet! Also opened the fridge and didn’t have any eggs (oops!) so used chia seeds as a substitute and it worked fine! A wonderful orange taste!
