Serve it as a snack or breakfast option for babies and toddlers alike, goes great in daycare lunchboxes, picnics or on the go travel snack. Coming out soft, moist, and nutrient-packed, it’s ideal for little hands to hold and for tiny teeth to nibble.

What you need:
Substitutions:
White Spelt Flour- I have been loving this flour lately, everything comes out so soft with it and it is higher in fiber. If you don’t have it you can substitute for white whole wheat, whole wheat or all-purpose. With whole wheat it will be a little more dense.
Bananas- I don’t recommend replacing the bananas in this recipe, it is what sweetens and makes up the cake. Make sure to use the ripest bananas for this recipe, the browner the better.
Eggs- I haven’t tried replacing the eggs in this recipe, but some people have had success with flax eggs. For flax egg add 1 tbsp ground flax with 4 tbsp water and let it sit for 15 minutes.
Melted Grass-Fed Butter- This can be replaced with avocado oil, melted coconut oil or any neutral oil.
Whole Milk Yogurt- For dairy-free option, swap for coconut yogurt or dairy-free yogurt of choice.
Blueberries- I like to use frozen wild blueberries, they are sweeter in taste and don’t have a peel. You can use fresh blueberries as well, but for babies I recommend cutting them in half or smashing before adding to the batter.

The knife wouldn’t come out clean so 50mins in the oven I had to take it out because the top was burning. I think its cooked, but it looks a bit more doughy/wet and dense than yours. It’s definitely not fluffy. Any reason why the knife wouldn’t come out dry?
