Substitutions:
Veggies- I used garlic, carrots, celery and zucchini in this recipe. I don’t recommend swapping the garlic, carrots and celery, but you can replace or add whichever veggies you like. For example butternut squash, leafy greens, sweet potato, onion.
Cannellini Beans- These beans go really well in this recipe or you can use another white bean, like butter beans.
Broth- I used veggie broth in this recipe, you can use chicken or keep it vegetarian with vegetable broth.
Pasta- Use a kid-friendly pasta shape, like small shells, elbows, small stars or alphabet letters. I used semolina pasta, but you can replace with a gluten-free option, like chickpea pasta, brown rice pasta, etc.

Prep all your veggies for smoother cooking. Chop garlic, carrots, celery and zucchini. Wash cannellini beans from the can.

Add olive oil to heated pot, along with garlic, carrots, celery, zucchini, cannellini beans, salt, pepper, oregano and sauté for 2-3 minutes to bring out the flavors

Add tomato paste, crushed tomatoes, with 4 cups broth. Mix and bring to a boil

Once boiling reduce to medium heat and cover for 10 minutes

After 10 minutes mix in pasta and cover for additional 12-15 minutes Make sure you don't need to add more liquid, this varies between stovetop and pot you are using.
