Banana Date Cookies

Ingredients

Directions

  1. Preheat oven to 350F. Remove pits from dates, add to small bowl and cover with boiling water for 10 minutes
  1. In the meantime add banana to a bowl and mash
  1. Drain dates, add them to the bowl, mash well and mix with banana If you see any large pieces of skin from the dates, you can remove them.
  1. Add almond flour and mix
  1. Scoop mixture with a teaspoon and roll into balls, placing them on a baking tray with parchment paper
  1. Gently press down with a fork on each ball
  1. Bake for 10-12 minutes
  1. Make sure to let the cookies cool for 10-15 minutes before serving and enjoy!

Note

Storage instructions- can refrigerate in airtight container for 3 days or freeze for up to 1 month
