Tips for Best Success:

-I recommend using a mini silicone muffin tin for best success. They are a little difficult to pull out of a normal muffin tin since they are delicate.

-You must soften the broccoli beforehand. I boiled it for 10 minutes, but you can also steam it for 10 minutes or microwave it for 2 minutes till soft. If microwaving it, add 2 tbsp of water and make sure to cover it.

-These egg bites are very versatile, you can add whatever vegetables you and your family like. Like chopped spinach or bell peppers, you can sprinkle in some herbs or cheese. You choose based on your preference.

Ingredients

3 eggs
3/4 cup cottage cheese
1 cup boiled or steamed chopped broccoli (about 5 broccoli florets)
Optional
Sprinkle of shredded cheese on top of egg bites

Directions

Preheat oven to 350 and boil broccoli for 10 minutes.
