Ingredients & Substitutions:

White Spelt Flour- I used white spelt flour, but you can replace with all-purpose flour or self-rising flour. If using self-rising flour, omit the baking powder in the recipe.

Eggs- I haven’t tried this recipe without eggs. The best egg replacement I’ve had success with is a flax egg. For flax eggs mix 1 tbsp ground flax with 3 tbsp water and let sit for 15 minutes.

Milk- I used whole milk in this recipe. This can be replaced with a non-dairy milk if preferred, for example almond milk, soy milk, oat milk, etc.

Butter- Butter can be replaced with an oil, like coconut oil or avocado oil.

Maple Syrup- The maple syrup really gives that pancake feel, but it can be replaced with honey or date syrup.

Ingredients

Adjust Servings
1 1/3 cups white spelt flour or all-purpose
2 tsp baking powder
2 eggs
3 tbsp melted butter
3/4 cup milk
1 tsp vanilla extract
2 tbsp maple syrup
Toppings of choice- banana, berries, chocolate chips, etc.

Preheat oven to 375F

Add all wet ingredients to mixing bowl- eggs, melted butter, milk, vanilla extract, maple syrup and mix

Add dry ingredients- flour, baking powder and mix in

Add batter to muffin tin and add favorite toppings, like strawberries, blueberries, banana, chocolate chips, sprinkles, etc.
If using silicone muffin tin no need to spray or brush with oil. For non-stick muffin tin brush or spray with oil.

Add toppings and bake for 17-19 minutes. If using a large muffin tin bake for 20-23 minutes until toothpick comes out clean.
