When Zion turned 1 I had to make him a healthier, moist, tasty, sugar-free smash cake and this one turned out perfect!
Baking is not my strong suit, so if I was able to make it so can you and the whole family ended up eating some with him. This 1 year smash cake is sweetened with bananas, covered with a light, fluffy, easy, homemade whipped cream and decorated with all of baby's favorite berries. The cake itself is soft, nutritious but also provides a creamy texture that's perfect for smashing and exploring. This recipe has been a success for hundreds of babies! I promise it tastes so good, the whole family can enjoy it together. No birthday? You should still make it. Make a healthier dessert for you and your kids!
What you need:
When making the cake I used
4 in. cake pans, which are a lot smaller than normal cake pans so that it is visually appealing and easy to handle for baby, allowing the birthday baby to have a joyful and messy experience.
If you do not have small cake pans you can still make this cake. Try it out with 6 in cake pans, 8 inch cake pans and do two layers or make some
cupcakes!
For the whipped cream you will need an
electric mixer.
Tips for Best Success:
- Make the cake the day before and store in container or ziplocks on the counter, DO NOT put in the refrigerator, it will harden for baby or make cake that morning and cool before adding the whipped cream
- I recommend assembling the cake and whipped cream with berries on top before serving
Substitutions:
Flour: can substitute with oat flour, gluten-free flour or almond flour
Eggs: you can substitute with yogurt, flax eggs or extra banana with milk or non-dairy milk
Butter: can substitute with coconut oil or any neutral oil
Banana: can substitute with 1 cup applesauce
Whipped cream: can substitute with full-fat coconut milk , put coconut milk can in fridge overnight and whip the next day for a few minutes with maple syrup.
