I don't recommend substituting anything in this recipe, the only thing that can be replaced is the egg. To make an egg-free muffin replace with flax egg. For flax egg take 1 tbsp of ground flaxseed with 3-4 tbsp of water, mix and let mixture sit for 15 minutes.
I like to use a mini muffin tin to make things easier for babies and toddlers.
