This recipe is for 9 month old baby & up
If you are looking for healthy lunch ideas for kids, that are easy to prepare and quick to make, this Baby-Friendly Black Bean Tacos recipe takes about 15 minutes to whip up and comes out absolutely delicious! This recipe is great for babies, toddler, older kids and adults, for lunch, dinner or serve it in your kids lunchbox. I myself enjoy eating it with some guac and salsa on the side.
When I first introduced my baby to solid foods, I wanted to make sure that each meal was not only nutritious but also easy for him to eat. Black bean tacos became an instant favorite, especially it being so easy and convenient to make. The combination of mashed black beans with avocado was perfect for his developing taste buds. The soft tortillas were easy for him to grab and gnaw on, and the creamy texture of the avocado made it a hit. The black beans, packed with protein and fiber, provided a great source of energy, and I felt good knowing he was getting such a wholesome meal that supported his growth.
Versatility:
What I love most about this healthy lunch idea for kids, is how versatile it is. As my baby’s tastes and skills have evolved, I’ve been able to adjust the recipe to suit his needs. At first, I mashed everything together into a smooth consistency, but as he got older and began experimenting with chewing, I left the beans and avocado a little chunkier. Now that he's a toddler, he enjoys the tacos with a bit of mild cheese sprinkled on top or even a squeeze of lime on the avocado for a burst of flavor. It’s been so rewarding watching him enjoy such a simple, healthy meal—and it’s something the whole family can enjoy together!
This healthy lunch idea for kids is excellent for a quick after-school dinner or goes great in a
lunchbox!
Nutritional Benefits of Baby-Friendly Black Bean Tacos:
Black Beans: An excellent source of plant-based protein and fiber, both of which are essential for your baby's growth and development. Protein helps build muscles and tissues, while fiber promotes healthy digestion and prevents constipation. Black beans are also rich in iron, which supports the development of healthy red blood cells and helps prevent iron deficiency, a common concern in growing babies. Additionally, black beans contain folate, magnesium, and potassium, all of which play important roles in brain development, bone health, and heart health.
Avocado: A fantastic addition to baby-friendly tacos. It is rich in healthy fats, which are crucial for brain development. It also contains vitamins E, K, and C, as well as potassium, which supports overall health. Avocados have a smooth texture that’s easy for babies to eat, whether mashed, sliced, or diced. Additionally, they provide a mild, creamy flavor that complements the beans and other taco ingredients perfectly.
Cheese: Great source of protein, which is crucial for building and repairing tissues, muscles, and cells in growing children. One of the most well-known benefits of cheese is its high calcium content. Calcium is essential for the development of strong bones and teeth, particularly during the rapid growth phases in childhood. It is a good source of B vitamins, including vitamin B12, riboflavin (B2), and niacin (B3). These vitamins are essential for energy metabolism, helping the body convert food into usable energy.
Tips on How to Serve:
9 month old baby & up: Mash the black beans and serve with some mashed avocado
12 month baby & up: Can serve in a
divided suction plate with mashed black beans, avocado, cheese and pieces of tortilla on the side
Toddlers & adults: Serve the taco with beans and cheese melted inside and guacamole on the side.
Ingredients & Substitutions:
Tortilla: You can use a homemade tortilla or store-bought tortillas, wheat or gluten-free.
Black Beans: I love the black beans flavor in this recipe, but if you don't have you can swap with pinto beans. I used canned black beans for this recipe with no salt added.
Cheese: A mix of shredded cheese pairs well with the beans. For a vegan, dairy-free option you can leave out the cheese. In this case try adding the guacamole in the tortilla or add some dairy-free cheese alternative.
