Ingredients

Adjust Servings
15.5 oz (1 can) cooked chickpeas
1 carrot
1/2 sweet potato
1 tbsp olive oil
1/2 cup oats (instant or rolled)
1/2 tsp salt (omit for under 12 months)
1/2 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
pinch of black pepper
1 cup breadcrumbs of choice

Directions

Preheat oven to 375F
Mark as complete

Add all ingredients to a food processor- chickpeas, sweet potato, carrot, oats, olive oil and seasoning and pulse until you get a nice mixture

Scoop out portions and form into nugget shapes with your hands, roll each nugget lightly in breadcrumbs to coat

Add to baking tray with baking sheet and spray generously with oil

Bake for 20 minutes, halfway through take out flip the nuggets, spray again with oil and add to oven for remaining cook time

They are really soft when first taking out of oven, let them cool for at least 15 minutes. Serve along side your favorite dip & enjoy!

Notes

Storage instructions- Fridge: Store leftovers in an airtight container for up to 3 days.
Freezer: Freeze cooked, cooled in a bag or container. Keeps for up to 2 months.
