Ingredients

Adjust Servings
3 chicken leg quarters (skinless)
1 onion
1-2 garlic cloves
2 small potatoes
1 zucchini
1 carrot
1 grated tomato
1/2 tsp curry powder
1/4 tsp turmeric
pinch of black pepper
1 tbsp avocado oil
1 1/2-2 cups water or broth

Directions

Cut onion, garlic, potato, zucchini, carrot and grate tomato
Mark as complete

Add avocado oil to pot
Mark as complete

Add onion, curry powder, turmeric, black pepper and sauté for a few min to bring out the flavors

Add garlic cloves, mix and add chicken
Mark as complete

Sear chicken for about 3 min on each side

Add grated tomato and 1 1/2 cups water

Bring to a boil, cover and put in oven for 40 min on 375 F

After 40 min take out of oven and add all the veggies, cover and put back into oven for additional 30 min

Once ready debone all your chicken and put back into pot

Mash or blend for baby and serve
