It combines protein-packed beans with the creamy goodness of cheese, sandwiched between slices of whole grain bread and toasted to perfection. This simple yet delicious recipe is perfect for busy parents looking for a healthy, easy-to-make lunch or snack for their little ones. The beans, which can be black beans, pinto beans, or any favorite variety, provide plant-based protein, iron, and fiber, supporting digestion and keeping you full and energized throughout the day. The cheese adds calcium and additional protein, while its creamy texture perfectly complements the hearty beans. This meal is also incredibly versatile. You can use different types of beans or cheeses depending on what you have on hand, I like to use Pinto Beans for this recipe, which are rich in fiber, carbs, iron, choline, calcium, zinc, Vitamins A, K, B6 & more. You can even add a little mashed avocado for creaminess or a light spread of mild salsa for extra flavor, YUM! Whether served as a lunch, snack, or quick dinner, this sandwich is sure to become a go-to meal that your little one will enjoy.

 

Substitutions:

Whole wheat bread: You can use whichever bread you prefer, for example sourdough bread, rye bread, white bread, etc.

If you are dairy-free I recommend substituting the cheese with some avocado.

Pinto Beans- For this recipe I used canned Pinto Beans, you can replace with any type of bean you prefer, for example black beans, white beans, mashed chickpeas, etc.

Butter: For dairy-free option you can replace with olive oil or avocado oil

Ingredients

Directions

  1. Mash pinto beans
  1. Add beans on toast with shredded cheese
  1. Add butter or oil to heated pan
  1. Add toastie and cook each side for 2-3 min on low-medium heat
  1. Flatten out a little
  1. When ready cut into 4 pieces and serve along side fruit and avocado
