These beef and veggie puff pastry rolls are one of those recipes that disappear every single time I make them. They’re crispy and flaky on the outside, soft, moist, and flavorful on the inside, and incredibly versatile, perfect for babies 12 months and up, toddlers, kids, and adults alike 👶🧒🧑. Whether you’re serving them as a main dish, a hearty side, or bringing them to a family gathering, these rolls are always a guaranteed hit.

One of my favorite things about this recipe is how well it works for picky toddlers and little ones 💛. The filling is soft, cohesive, and easy to chew, while the puff pastry adds a familiar, comforting texture kids love. I always slice the rolls into smaller pieces once baked, which makes them much easier for little hands to hold and self-feed.

The boiled and mashed zucchini, carrot, and potato do more than add nutrition, they help bind the beef together and keep it from drying out. This makes the filling soft, moist, and cohesive, which is especially important for young eaters. The result is a tender filling that’s easier to chew and swallow, while still being incredibly flavorful.

Tips for Success ⭐

  • Thaw puff pastry properly: Remove puff pastry from the freezer about 45 minutes before using. It should be fully thawed but still cool so it’s easy to work with and doesn’t tear.

  • Roll it thinner: Lightly roll out the puff pastry so it’s thinner. This prevents thick, doughy layers and ensures a better balance of flaky pastry and filling.

  • Don’t overfill: Add the beef mixture, roll tightly, and slice—do not use the entire puff pastry sheet for one roll. Each sheet should make 2 rolls, giving you 4 total rolls.

  • Score before baking: Make 4–5 shallow slices across each roll before baking. This makes it much easier to cut into smaller, toddler-friendly pieces once cooked and helps the pastry bake evenly.

  • Always cook the beef first: The beef must be fully cooked before adding it to the puff pastry. This prevents a soggy pastry.

Ingredients

1/4 zucchini
1 onion
1 small-medium potato
1 carrot
1/2 tsp salt
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp paprika
1/4 tsp black pepper
1 tbsp avocado oil for cooking
2 puff pastry sheets
egg for brushing
1 lb. Extra lean protein of choice (beef, lamb, pork)

Directions

Thaw puff pastry sheet for 45 minutes before working with it, in the meantime preheat oven to 375F

Meanwhile boil zucchini, carrot, potato in a small pot for 15 minutes until soft. Drain well and mash

To make the beef chop onion. Add oil to heated pan and add the onion. Sauté for a few minutes till golden brown

Add lean ground beef or protein of choice. Add seasonings salt, pepper, cumin, turmeric, paprika, mix and mash. I like to use a potato masher to make the beef thinner and easier to eat. Cook for 15-17 minutes until cooked through.

Add 1 cup of the mashed veggies to the beef and mix everything together

Lightly roll out the puff pastry so it’s thinner. Add 3 nice scoops of beef to the edge of the puff pastry, leave a little room to roll and on the sides so it doesn't spill out. Roll the beef into the puff pastry and slice. Each puff pastry sheet makes 2 rolls, giving you 4 total rolls. Close down the ends with your fingers and add to parchment paper lined baking tray. Repeat 4 times

Lightly score 4–5 shallow slices across each roll to make cutting easier after baking. Brush the puff pastry with an egg on top.

Bake for 25 minutes until golden, flaky and crisp

When ready slice the rolls and serve with a side of hummus, tzatziki or yogurt dip

Notes

Storage instructions- Refrigerator: Store leftover puff pastry rolls in an airtight container in the fridge for up to 3 days. Reheating: Reheat in the oven or air fryer at 350°F until warmed through and crispy again. For toddlers, allow to cool slightly and cut into smaller pieces before serving.
Freezer: Freeze baked and fully cooled rolls in a freezer-safe container for up to 2 months. Thaw overnight in the fridge and reheat before serving.
