-Make sure to form the patties with your hand so they don’t fall apart.

-I used 1 small broccoli head, you can use a little less if you don’t want too much.

-When scooping the mixture to form patties, use a tablespoon so they all come out around the same size.

-Make them bite-size. Since these fritters are for kids, you don’t want to make them too big and not too thick.

-These work well in the oven, air fryer or you can pan fry with a little oil as well.

-You can use leftover rice for this recipe, if not make sure the rice is cooled before forming patties.

 

Substitutions:

White rice: I used long grain white rice, but most rice will work in this recipe. You can use short grain rice, jasmine rice or sticky rice.

Broccoli: If you don’t like broccoli, try swapping it with another veggie like cauliflower.

Cheddar Cheese: You can use any type of shredded cheese that you prefer, cheddar, mozzarella, swiss, etc.

Egg: If you need to omit the egg, I recommend adding 1 cup of shredded cheese, instead of 1/2 to hold the mixture together.

  1. Steam broccoli for 15 minutes
  1. Add cooked rice to a bowl, along with broccoli, cheese, egg and mix everything together
  1. Start to form your patties with your hands using tablespoon
  1. You can pan fry them with a little oil on medium heat for 3-4 minutes on each side or bake for 10 minutes in oven flipping halfway through on 400 F If baking make sure to spray with a little oil
  1. When ready cool & enjoy!
