-I used 1 small broccoli head, you can use a little less if you don't want too much.
-When scooping the mixture to form patties, use a tablespoon so they all come out around the same size.
-Make them bite-size. Since these fritters are for kids, you don't want to make them too big and not too thick.
-These work well in the oven, air fryer or you can pan fry with a little oil as well.
-You can use leftover rice for this recipe, if not make sure the rice is cooled before forming patties.
Substitutions:
White rice: I used long grain white rice, but most rice will work in this recipe. You can use short grain rice, jasmine rice or sticky rice.
Broccoli: If you don't like broccoli, try swapping it with another veggie like cauliflower.
Cheddar Cheese: You can use any type of shredded cheese that you prefer, cheddar, mozzarella, swiss, etc.
Egg: If you need to omit the egg, I recommend adding 1 cup of shredded cheese, instead of 1/2 to hold the mixture together.
