These Broccoli Cheesy Fingers are one of my favorite recipes on the blog, and I know they will be yours too!
With just 4 ingredients, mixed in one bowl and poured in a loaf tin, not much cooking is required. Made by mixing steamed, finely chopped broccoli with a blend of cheese, eggs, and flour, these fingers are then baked until golden and slightly crisped on the outside, with a soft, cheesy center. They're an excellent way to sneak some extra vegetables into your child's diet while providing a good source of calcium and protein. If your little one is doing baby led weaning (BLW) or just now transitioning from purees to solids, you have to give these a try! They come out very soft and are perfect for those tiny hands.
They can be served for breakfast, lunch, dinner or a yummy snack, the sky is the limit! You can serve them as a strip or cut into smaller pieces, along side some fruit, absolutely delicious. They are excellent for meal-prepping, freezing and heating up for about 30 seconds in the microwave or take it out of the freezer the night before, place in refrigerator and next day can be added to a lunchbox and served cold. Broccoli cheesy fingers are sure to become a family favorite.
