Carrot Cheesy Rice Balls

This recipe is for 11 month old baby & up

If you have leftover rice in your fridge you have to make these Carrot Cheesy Rice Balls! Made with only 3 ingredients, they come out so soft, tasty & delicious. These little balls are a fantastic finger food for babies and toddlers, mixing soft textures and nutrient-packed ingredients into a bite-sized snack. These rice balls are perfect for little hands to grasp, making them an ideal option for baby-led weaning (BLW) and toddlers who are learning to self-feed. What you need:

You will need:

Something to steam and blend the carrots, I like to use my baby cook blender.

Baking Pan

Parchment Paper

 

Substitutions:

Carrot- You can replace the carrot with another veggie that you prefer, for example sweet potatoes, broccoli, beets, etc.

White long-grain rice- You can replace with Arborio rice (risotto rice) or sushi rice.

Cheese- You will need something to bind the rice and carrots together, you can replace with 1 egg and add some nutritional yeast for a cheesy flavor or use non-dairy plant based cheese. For cheese type you can use whichever you prefer, I used a blend of mozzarella with cheddar.

Ingredients

Adjust Servings
2 carrots
1 cup cooked white rice
1/2 cup shredded cheese
Avocado Oil- for spraying or any neutral cooking oil

Preheat oven to 350 F
Mark as complete

Steam carrots for 15 min and blend into puree
You can add a splash of water to help get the blender going
Mark as complete

When ready add to mixing bowl along with white rice, cheese and mix

Form balls and add to baking tray

Spray with oil and bake for 12-13 minutes flipping halfway through
You do not need to spray with oil when you flip

Notes

Storage instructions- can refrigerate for up to 3 days or freeze for up to 1 month
Reheating instructions- Reheat in oven or air fryer for a few minutes or can microwave for a few seconds
