If you have leftover rice in your fridge you have to make these Carrot Cheesy Rice Balls! Made with only 3 ingredients, they come out so soft, tasty & delicious. Something to steam and blend the carrots, I like to use my
baby cook blender.

Substitutions:
Carrot- You can replace the carrot with another veggie that you prefer, for example sweet potatoes, broccoli, beets, etc.
White long-grain rice- You can replace with Arborio rice (risotto rice) or sushi rice.
Cheese- You will need something to bind the rice and carrots together, you can replace with 1 egg and add some nutritional yeast for a cheesy flavor or use non-dairy plant based cheese. For cheese type you can use whichever you prefer, I used a blend of mozzarella with cheddar.
