carrot pancakes pinit

This recipe is for 7 month baby & up

These Carrot Pancakes are a favorite on my blog and for good reason! They are the perfect blend of taste and nutrition. A beautiful, light, spring breakfast made with wholesome, nutritious ingredients for your little one’s to enjoy. The oats provide a rich source of fiber and whole grains, while the carrots add a subtle sweetness along with essential vitamins like A and C. Easy to prepare, these pancakes are whipped up in a blender, creating a smooth batter that cooks up perfectly.

They are naturally sweetened with bananas, making them an appealing choice for little taste buds without the need for added sugars. Packed with nutrients, these pancakes support healthy growth and development, and their soft texture is ideal for babies and toddlers to chew and enjoy. If you have a picky toddler, you should definitely give these a try! Versatile lunchbox friendly and freezer-friendly, Carrot Pancakes can be made in batches, stored, and reheated for a quick and healthy meal any day of the week. They can be served plain or topped with fresh fruit, yogurt, or a drizzle of additional maple syrup for older kids, making breakfast time both fun and healthy!

Why Carrot Pancakes?

The natural sweetness of bananas and carrots, combined with the warm flavor of cinnamon, makes these pancakes irresistibly tasty. Their soft, slightly dense texture is perfect for toddlers still developing chewing skills. Parents love that they’re easy to batch cook and freeze, ensuring a quick, nutritious option for busy mornings.

Carrots are a nutritional powerhouse for growing kids. They’re rich in beta-carotene, which the body converts into vitamin A to support healthy vision, skin, and immune function. Additionally, carrots contain dietary fiber, which aids digestion, and a variety of vitamins and minerals, including vitamin C and potassium. By incorporating carrots into a pancake batter, parents can deliver these benefits in a form that kids find exciting and delicious.

Serving Ideas:

Carrot pancakes can be served plain or with toppings like yogurt, cream cheese, or a drizzle of maple syrup for older kids. Add a side of fresh fruit or applesauce for an extra dose of vitamins and natural sweetness. For babies & toddlers, cut the pancakes into small, manageable pieces to encourage self-feeding. Add a handful of finely chopped nuts or raisins for older kids who enjoy variety.

Substitutions:

Egg- Can be replaced with flax egg or plant-based egg alternative.

Yogurt- Can be replaced with applesauce or any non-dairy yogurt option.

What you need:

Steamer and blender- I like to use a babycook, which has both a steamer and blender all in one.

These are sooo delicious. I love making them in bulk and storing in the freezer for a quick and easy breakfast. I also add spinach, chia seeds and whatever else I feel for an extra boost! I also love adding peanut butter on top and my toddler gobbles them up! Thanks for the recipe.
