Made with just 6 wholesome ingredients, it’s healthy, flavorful, protein-packed, and perfect for breakfast or lunch. The texture is soft yet sturdy enough to hold its shape, making it ideal for little hands. The steamed cauliflower blends right in, adding nutrients without overpowering the flavor. Even picky eaters who claim they “don’t like cauliflower” usually have no idea it’s in there.

Another reason to love this recipe is how versatile it is. Serve it warm for breakfast alongside fruit, pack it into lunchboxes, or enjoy it as a quick midday meal when you need something filling but easy. It reheats beautifully and can be cut into strips or squares depending on who you’re serving. For adults, you can pair it with a simple salad for a balanced lunch. • Flour swap: Substitute the 1/3 cup oat flour with 3-4 tablespoons all-purpose flour.

  • Gluten-free option: Stick with oat flour (just make sure it’s certified gluten-free if needed).

  • Cheese swap: Use cheddar, Colby Jack, Monterey Jack, or even a mild shredded blend instead of mozzarella.

  • Dairy adjustment: You can replace cottage cheese with ricotta for a slightly smoother texture.
