Coconut Date Walnut Chews

🥥 Coconut Date Walnut Chews (3-Ingredient No-Bake Snack)

If you’re looking for a simple, healthy snack that takes just minutes to make, these coconut date walnut chews are such a great one to keep on hand. They’re made with only three ingredients, require no baking, and come together quickly in a food processor.

I actually started making these as a wake-up snack for my kids before breakfast, and it has helped us so much in the mornings. Sometimes kids wake up hungry but breakfast isn’t quite ready yet, which can easily lead to meltdowns or cranky moods. Giving them 1-2 of these little chews while I prepare breakfast has been such a lifesaver.

They’re naturally sweet from the dates, soft, chewy, and incredibly satisfying. The walnuts add healthy fats and a little texture, while the coconut gives them a light sweetness and delicious flavor. Even better, they’re made with whole, nourishing ingredients that you can feel good about serving.

My kids love them, and honestly I eat them just as much as they do. They’re perfect as a quick grab-and-go snack, lunchbox addition, afternoon energy bite, or even a healthy dessert when you want something sweet but nourishing.

✨ Why You’ll Love These

  • 🥥 Made with only 3 wholesome ingredients

  • ⏱️ No-bake and ready in minutes

  • 👶 Soft and easy for little eaters, plus adults can enjoy them too!

  • 🧺 Perfect grab-and-go snack

  • 🍬 Naturally sweet without added sugar

  • 💪 Packed with healthy fats and nutrients

Once you make a batch, you’ll probably start keeping them in the fridge all the time.

🥜 Nutritional Benefits

These little chews may be small, but they’re packed with goodness.

🌰 Walnuts

Walnuts are especially amazing for kids (and adults).

  • Rich in omega-3 fatty acids, which support brain development and cognitive function

  • Contain healthy fats that help with satiety and sustained energy

  • Provide plant-based protein

  • Packed with antioxidants and important minerals like magnesium

Omega-3 fats are particularly important for growing children because they support brain health, focus, and overall development.

🌴 Dates

Dates are naturally sweet and full of nutrients.

  • Provide natural sugars for quick energy

  • Contain fiber, which supports digestion

  • Rich in potassium and antioxidants

  • Help bind the mixture without needing added sweeteners

They give these bites that soft, caramel-like texture kids love.

🥥 Coconut

Unsweetened coconut adds:

  • Healthy fats for long-lasting energy

  • A delicious flavor and texture

  • Small amounts of iron and fiber

Together, these three ingredients create a snack that is both energizing and satisfying.

👶 Soft & Easy to Eat

One of the reasons I love these so much is the texture. They’re:

  • Soft

  • Chewy

  • Easy for toddlers to eat

  • Not crunchy or hard

They work well for toddlers, older kids, and even adults. I eat them too, especially as an afternoon pick-me-up or healthier dessert option.

🍽️ When to Serve Them

These little chews are incredibly versatile and can be served anytime:

  • Wake-up snack before breakfast

  • Lunchbox treat

  • After school snack

  • Quick energy bite before activities

  • Healthy dessert

  • On-the-go snack for busy days

Because they’re soft and chewy, they’re also easy for toddlers and little eaters to enjoy.

Substitutions:

  • Almonds – A great replacement for walnuts. They still provide healthy fats, protein, and a mild nutty flavor.

  • Cashews – Softer and slightly sweeter, making the chews extra creamy when blended.

  • Pecans – Very similar texture to walnuts with a naturally buttery taste.

  • Sunflower seeds – A great nut-free option for kids with allergies.

Date Substitutions
Dates are what give these chews their natural sweetness and sticky texture, but if you’re out you can try:

  • Dried figs – Slightly less sweet but still soft and sticky.

  • Dried apricots – Adds a mild tangy flavor and bright color.

Coconut Substitutions
If you don’t have shredded coconut or prefer something different:

  • Oat flour or rolled oats – Helps bind the mixture and makes the texture more like an energy bite.

  • Ground flaxseed – Adds extra fiber and omega-3s.

  • Almond Flour– A great boost of plant-based protein and healthy fats.
