No complicated ingredients, no bottled sauces, just tender chicken, soft noodles, and a flavorful homemade sauce that comes together in under 30 minutes. It’s the kind of dinner that feels like takeout, but made with ingredients you trust and that’s always a win in my kitchen. I didn’t put any veggies in the recipe, but you can totally amp this recipe up and put whichever ones you and your family like. It literally goes with anything- onion, carrots, mushrooms, red bell pepper, broccoli or frozen stir fry mix goes so well!

Ingredients

Adjust Servings
4 boneless chicken thighs
1/4 cup low sodium soy sauce
2 tbsp sesame oil
2 tbsp date syrup
2 garlic cloves
1/4-1/2 tsp powdered ginger (depending on how much you like)
1/4 tsp black pepper
1 1/2 tsp cornstarch
4 tbsp water (added later)
1 pack (8-12 oz) lo mein noodles, egg noodles, ramen noodles or thin spaghetti will all work

Directions

Prep everything beforehand for smoother cooking- cube chicken thighs

Make your sauce- in a small bowl or cup whisk together soy sauce, sesame oil, date syrup, grated garlic, ginger, black pepper, cornstarch and put to the side

Heat a wok or medium-sized pan with a little drizzle of sesame oil over high heat, add the chicken in a single layer. Sear on each side until nicely golden, about 5 minutes total

Pour the prepared sauce into the pan with the chicken, stir well to coat. Let the sauce simmer and thicken for about a minute

Once thickened add some water, cover on medium heat and cook chicken for another 5-7 minutes until fully cooked through.

While the chicken finishes cooking boil noodles according to package instructions and drain well

Add the cooked noodles directly into the pan with the chicken. Toss everything together until evenly coated in the sauce. Taste and adjust seasoning if needed.
Optional Add-Ins: If your family enjoys veggies, you can sauté broccoli, carrots, cabbage, mushrooms, or frozen stir fry vegetables and mix them in before serving.

Storage instructions- Store in airtight container for up to 4 days. I don't recommend freezing this recipe.
