Broccoli Cheese Soup is the best comfort meal on those cold winter days when the whole family is stuck at home, everyone can share and enjoy it together. It reminds me of warmth, coziness, creaminess all in one bowl and personally it’s one of my favorite soups. This soup takes less than 30 minutes to make and is excellent for quick weeknight dinners or lunch. It offers a perfect balance of taste and nutrition, making it an excellent option for kids. This revamped healthier take on broccoli cheese soup ensures that little ones get the vitamins, minerals, and energy they need, all while enjoying a comforting, delicious meal.   • Cheese: The best cheese to use for this recipe is raw cheddar cheese. I recommend shredding your own cheese it makes the soup so much better!
  • Add Protein: Stir in cooked chicken or white beans for extra protein.
  • Freeze for Later: Portion leftovers into small containers for quick, reheatable meals.
  • Adjusting soup based on preference: For those who like a cheesier soup you can add 1 more cup of shredded cheese. For younger kids you can chop up the broccoli very small, for older you can leave some bigger pieces of broccoli. It really depends on how you like it. For babies, you can blend a portion into a creamy soup puree.

Ingredients

Adjust Servings
1 broccoli head
1-2 shredded carrots
1 onion
3 garlic cloves
1 1/2 cups shredded cheese
2 1/2 cups veggie or chicken broth
1 cup milk
1/2 tsp turmeric
pinch of black pepper
Olive oil for cooking
Optional
2 tbsp flour of choice to make soup thicker
Salt to your liking

Directions

Prep all your veggies to make cooking process smoother. Chop onion, garlic, broccoli. Grate carrots and cheese.

To heated pot add olive oil, with onion, turmeric, pepper and sauté for 4 minutes till golden brown

Add garlic and sauté for another minute to bring out the flavors

Add carrots, broccoli, broth. If you are adding flour, add it in at this point and mix.

Bring to a boil, cover on medium heat for 15-20 minutes

Turn off the heat but leave on stove top and add milk with cheese and mix.

Notes

Storage instructions- can refrigerate for 2-3 days or freeze for up to 1 month
Reheating instructions- best way to reheat is stovetop, but can also be reheated in microwave. If frozen, take out the night before, leave in fridge to thaw and reheat.
