Ingredients & Substitutions:

  • Dates: The star sweetener. Use Medjool or Deglet Noor dates. I don’t recommend replacing the dates in this recipe.

  • Avocado oil: A healthy, neutral-flavored oil that gives moisture without overpowering flavor.
    Substitute: Olive oil, melted coconut oil, or even a mild vegetable oil will work just fine.

  • Eggs: Help with binding and fluffiness.
    Substitute: For egg-free version, use flax eggs (1 tbsp flaxseed meal + 3 tbsp water per egg), though texture may be slightly more dense.

  • Non-dairy milk: Almond milk, oat milk, coconut milk all great options to keep this dairy-free.
    Substitute: Regular whole milk works great.

  • White spelt flour: Lighter than whole wheat but more nutritious than plain white flour.
    Substitute: All-purpose flour, self-rising flour but omit the baking powder, or a gluten-free 1:1 baking flour blend.

  • Vanilla: Adds a nice vanilla flavor, I don’t recommend replacing it in this recipe.

Ingredients

13 medjool dates
1 cup non-dairy milk of choice
1/3 cup avocado oil or coconut oil
2 eggs
1 tsp vanilla extract
1 1/3 cups white spelt flour or all-purpose
2 tsp baking powder
Optional
Add a topping like sliced bananas or chocolate chips for older kids

Directions

Preheat oven to 350 F
Mark as complete

Heat up non-dairy milk in microwave or stovetop until its very hot
Mark as complete

In a small bowl add your dates (make sure no pits) and pour hot milk over the dates. Let sit for 10 minutes to soften

Add dates and milk to a blender, along with oil, eggs, vanilla extract and blend until smooth

In a mixing bowl add flour and baking powder. Pour wet ingredients over the dry ingredients and mix everything together.
If you buy sifted flour or sift it yourself the cake will be fluffier.

Add a piece of parchment paper to the bottom of cake pan or spray with oil and add your batter. If you are adding any toppings add them right now

Bake for 30 minutes until toothpick comes out clean

For 9-12 months old you can cut into smaller pieces for little ones

Notes

Storage instructions - Store in an airtight container at room temperature for up to 3 days.
I recommend freezing slices for up to 1 month and pulling out a slice to thaw or can reheat in microwave for 20-30 seconds.
