- Make sure to sift the flour, that way the cake will come out light and fluffy.
-If you are making the cream cheese frosting, I recommend storing the cake on the countertop and the frosting in the fridge. When ready to eat add some frosting and serve, that way the cake won't harden in the fridge and keep it's soft, moist texture. If you are freezing pieces of cake, do not freeze with the cream cheese frosting.
-For the ginger and cloves I mildly spiced the cake to make it more kid-friendly. If you like a little more flavor you can add 1/2 tsp ginger and 1/2 tsp cloves instead of 1/4 of a teaspoon.
Substitutions:
White whole wheat flour- You can use all-purpose, white spelt, gluten-free or oat flour if preferred. When using oat flour the cake will come out more dense and hold a different texture, same with gluten-free.
Unsweetened Applesauce- The applesauce gives the cake its moisture, while adding a beautiful flavor. You can replace with mashed banana if preferred, but it might make the cake a little more dense.
Eggs- Can replace with flax eggs or plant based egg alternative. If using flax egg add 1 tbsp ground flaxseed with 4 tbsp water and let sit for 15 minutes, till mixture thickens.
Avocado oil- This can be substituted with any neutral oil, melted butter or coconut oil.
Maple Syrup- You can replace with another sweetener of choice, for example honey or date syrup.
