If it's a minimal amount of butter and milk, then yes you can use your leftover mashed potatoes. The best for this recipe is steamed or boiled mashed potatoes with nothing else added. If the potatoes are too wet, you can always add a bit more gluten-free flour to help them stick together.
Tips for Best Success:
-Try putting your mashed potatoes in the fridge for a little while, it will make things easier when making the bites.
-Use parchment paper on your baking tray, so that they wont get stuck.
-Depending on if you are using leftover mashed potatoes rather than potatoes with nothing else added, you will need to adjust gluten-free flour and cheese.
-Steaming the potato works best, since there won't be any excess water. You can boil the potato as well, but will be a bit more wet.
