This recipe is very flexible and can easily be adapted based on what you have on hand:

  • Bananas: The ripe bananas provide both sweetness and moisture, so they are a key ingredient. Very ripe bananas work best for the sweetest flavor.
  • Eggs: You can substitute each egg with a flax egg (1 tbsp ground flaxseed + 3 tbsp water) if needed, though the texture may be slightly softer.
  • Non-Dairy Milk: Any milk works well, including whole milk, oat milk, almond milk, soy milk, or coconut milk.
  • Avocado Oil: Substitute with melted butter, olive oil, coconut oil, or another neutral-flavored oil.
  • Vanilla Extract: You can omit it if needed
  • Oat Flour: You can use all-purpose flour or wheat instead. If making your own oat flour, simply blend rolled oats until finely ground.
  • Cinnamon: Pumpkin pie spice or apple pie spice can be used instead, or simply leave it out.
  • Carrots: I don’t recommend substituting the carrots in this recipe.

Ingredients

Adjust Servings
2 ripe bananas
2 eggs
3 tbsp avocado oil or any neutral oil
1/4 cup non-dairy milk (I used almond milk)
1 tsp vanilla extract
1 1/2 cups oat flour
1 tsp baking powder
1 tsp cinnamon
1 cup finely grated carrots

Directions

Preheat oven to 350F

Mash bananas in medium size mixing bowl
Mark as complete

Add the rest of the wet ingredients- eggs, avocado oil, non-dairy milk, vanilla and whisk

Add dry ingredients- oat flour, baking powder, cinnamon and mix together
For oat flour just blitz rolled or instant oats till it becomes a fine powder

Fold in finely grated carrots
Tips: when grating the carrots use the finer side of the grater. Do not use pre-grated carrots, they are thicker and don't have the same moisture

Spray or brush muffin tin with a little oil and add mixture, filling it almost to the top
If you want to add toppings, do it now. For babies and younger kids I recommend leaving it as is

If using bigger muffin tin cook time will be more (around 22-25 minutes)

Notes

Storage instructions- Store the muffins in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days
Freezer- freeze in a freezer-safe container or bag for up to 2 months. Simply thaw at room temperature or warm in the microwave for a few seconds before serving. Perfect for meal prep and busy mornings
