With their soft texture and nutrient-dense ingredients, Mushroom Onion Egg Bites are a fantastic way to introduce your baby to the flavors of mushrooms and onions. I personally love these, I had to stop myself from eating all of them because they are that good! They kind of remind me of the Starbucks Mushroom Egg Bites, but they are made with cleaner, healthier ingredients.
Mushrooms are a little gummy for baby, I was always a little nervous serving them early on, but I finally made a recipe where little one’s can enjoy the flavors of mushrooms and get all of it’s amazing benefits. Plus, they are absolutely delicious! This easy breakfast option is so convenient and versatile, as they can be stored in the refrigerator for up to three days or great to batch cook and pull out of the freezer when ready to eat, making them a fantastic option for quick snacks, breakfast or lunch. You can serve them on their own or pair them with soft fruits to round out the meal.
Benefits of Mushroom Onion Egg Bites for Kids:
These egg bites are soft, flavorful, and ideal for small hands, making them a great choice for babies who are transitioning from purees to solids or following a baby-led weaning (BLW) approach. Same with cottage cheese, it is full of nutrients like calcium, iodine, selenium, zinc, B Vitamins and protein.

Onions also contain prebiotic fibers, which support a healthy gut by feeding beneficial bacteria. How to Serve:
For 9 month baby: You can serve it in bite size pieces along side fruit
For 12 months and up: These bites are very soft, you can serve them whole along side fruit.
Substitutions:
Eggs: For this recipe it’s a little difficult replacing the eggs, since that is the main ingredient. You can swap for plant based egg alternative.
Cottage cheese: Can be replaced with farmers cheese or ricotta cheese.
Mushrooms: I don’t recommend replacing the mushrooms in this recipe. I used Baby Bella, you can use white mushrooms as well.
Onion: I don’t recommend replacing the onion in this recipe.
Olive oil: Can be replaced with avocado oil or any neutral oil
What you need:
I used a silicone mini muffin tin for best results, but you can use a large muffin tin as well.

Ingredients
Directions

Preheat oven to 350 F

In a small food processor chop onion and mushrooms

On high heat add olive oil to pan along with onion and sauté for 2 minutes

Add mushrooms, salt, pepper and sauté for additional 5-7 minutes

When ready add to mixing bowl, along with eggs, cottage cheese and mix

Spray or line your muffin tin and start adding the mixture

Bake for 25 minutes

Cool for 15 minutes before removing from muffin tin and enjoy!
