Tips for Success:

-I recommend prepping everything before for quicker cooking. Wash the rice, shred your chicken cut the onion and wash your canned chickpeas. After that your good to go!

-For this recipe I used chicken breast that I had left from a rotisserie. If you are making fresh chicken, you can cook it before however you’d like. You can pan fry or boil and cut it up into pieces. I personally used chicken breast in this recipe, but any part of the chicken will work, breast, thigh or pieces of drumstick.

 

What you need:

A medium size non-stick deep pan. I used my Titanium, non teflon, non-toxic Pan by Our Place, food comes out perfect every time.

Ingredients

Adjust Servings
1-2 pieces cooked chicken breast
1 cup white rice
1 onion
1/2 cup cooked chickpeas I used canned
2 cups water
1/2 tsp turmeric
1/2 tsp salt
pinch of black pepper
3 tbsp Olive oil 1 more tbsp for drizzle on rice

Directions

Prep everything for quicker cooking. Wash rice, wash chickpeas from can, cut onion and shred chicken.
Mark as complete

Add 3 tbsp olive oil to heated pan, along with onion, turmeric, salt, black pepper and sauté for a few minutes till golden brown
If onions are sticking to pan add 1 tbsp of water
Mark as complete

Add rice, chickpeas, chicken and mix
Mark as complete

Add another drizzle of olive oil on top (about 1 tbsp)
Mark as complete
5.

Add water and bring to a boil
Mark as complete

Once boiling, cover, reduce to low-medium heat and cook for 20-25 minutes

When ready, fluff everything together and serve!

Storage instructions- can refrigerate for 3-4 days or freeze for up to 1 month
