  • I recommend taking it out and flipping the chicken halfway through the hour mark, so that way the other side can get the same amount of flavor. I usually take out the parchment paper from the top and let it cook for an additional 10-15 minutes without any cover.

 

Substitutions:

Bone-in Chicken Thighs (skin on)- I noticed whenever I cook the chicken with the bone and skin it comes out the most tender and softest. I have tried boneless chicken thighs as well and although it does work, it was a little harder for my little one to chew. If you do use it cook time will be a lot less.

Low Sodium Soy Sauce- In case of a soy allergy, you can swap with coconut aminos.

Honey- The honey goes perfectly with the sauce in this recipe, but if you prefer you can replace with date syrup.

Broccoli- You can omit the broccoli or replace with bell peppers, green beans or snap peas.

Garlic & Ginger- Don’t remove this from the sauce! It gives the most beautiful flavor, without it, it won’t be complete.

Ingredients

5-6 bone-in chicken thighs (skin on)
1 broccoli head
2 tbsp avocado oil or sesame oil
1/3 cup soy sauce or coconut aminos
1/2 cup honey
3 garlic cloves
nice grate of ginger (taste sauce and adjust to liking)

Directions

Preheat oven to 400F

Start by washing broccoli and chop into pieces or you can use frozen broccoli florets and prep chicken- add everything to baking tray

Make sauce in a small bowl by adding oil, soy sauce, honey, garlic, ginger and mix

Pour marinade over chicken & broccoli and make sure to massage sauce into chicken

Slightly wet a parchment paper, crinkle it up and cover the chicken

Bake in oven for 60 minutes flipping the chicken halfway through, after 60 minutes take off the parchment paper and bake for an additional 10-15 minutes until you get a golden color

Notes

Storage instructions- Refrigerator: Store leftovers in an airtight container for up to 3–4 days.
Freezer: Freeze cooked chicken and broccoli (sauce included) in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating.
