Ingredients & Substitutions:
Potato- I used gold potatoes in this recipe, I think they work best and have the smoothest texture. I don’t recommend replacing it.
Green Peas- If you don’t have peas you can replace this with another veggie of choice, like carrot or broccoli.
Cheese- You can choose any shredded cheese of choice. I like to use a mix of mozzarella and cheddar. For dairy-free option you can add about 2-3 tbsp flour of choice or gluten-free flour to help bind the patty together.

Pea Potato Cakes

Boil water in pot, add potatoes and peas. Boil, slightly covered, till soft for about 15 minutes

When ready add to a bowl and mash, along with cheese, turmeric, black pepper and mix

Form your potato cakes by scooping with a tbsp and use your hands to create a circular shape

Once you've shaped the potato cakes you can slightly fry them with a little oil on a pan or you can bake them for 15-20 minutes in the oven. If you choose to bake spray with oil and flip halfway through. If you choose to lightly fry, add a little olive oil to pan and cook for 3-4 minutes on each side on medium heat. For oven, bake for 15-20 min flipping halfway through on 400F. Make sure to spray with oil.

The patties are very delicate so make sure you completely cool for at least 15 minutes before serving. Serve with your favorite sides like mashed avocado, yogurt dip, etc. and enjoy!

Storage instructions- can refrigerate for up to 4 days or freeze for up to 1 month.
Reheating instructions- can reheat in microwave for a few seconds, oven or air fryer, or thaw in fridge from the night before.
