Ingredients

Adjust Servings
1 pack (8 oz.) baby bella mushrooms
2-3 garlic cloves
2 cups orzo
2 tbsp butter
1/2 cup parmesan cheese
4 cups broth of choice or half water half broth
salt to your liking
1/4 tsp black pepper

Directions

Clean and cut mushrooms into smaller pieces so it's easier for little ones to chew. Finely chop garlic or use a garlic press

To a heated pan or pot add 1 tbsp butter, along with garlic, mushrooms, salt, pepper and sauté on high for 3 minutes

Add orzo, broth and mix. I do 2 cups broth, 2 cups water to be exact and bring to a boil.

When boiling, cover, reduce to low heat and cook for 25 minutes. I have my heat setting at a level 3.

When ready add 1 more tbsp of butter, parmesan cheese and mix it in

Notes

Storage & Reheating: Fridge – Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheating – Warm in a skillet over low heat with a splash of broth or water to bring back the creamy texture. You can also microwave it in short intervals, stirring in between. Freezer – Mushroom orzo can be frozen in freezer-safe containers for up to 2 months. Thaw overnight in the fridge before reheating. Tip – Add a little extra butter or parmesan when reheating to refresh the flavor.
