Spinach and Cheese Brownies- A Healthy Breakfast or Lunch for kids as little as 9 months old

These savory brownies come out beyond delicious, made with a few simple, healthy ingredients that you probably have in your house right now! They are made with oat flour for a gluten-free option, eggs, lots of spinach and mozzarella, can’t get easier than that! Serve it as a nutrient-dense snack or a healthy breakfast and lunch option. These brownies have a soft, moist texture and a mild flavor that appeals to children. The cheesy spinach taste comes out so good, making it easier for kids to enjoy the greens without complaint. Their handheld size makes them perfect for lunchboxes, picnics, or after-school snacks.

 

Why Spinach and Cheese?

Spinach is a nutrient-rich vegetable loaded with vitamins A, C, and K, iron, calcium, and fiber. Its mild flavor makes it easy to hide in recipes, making it ideal for picky eaters. Cheese, on the other hand, brings a creamy texture and savory taste that kids love. Together, spinach and cheese create a winning combination of nutrition and flavor.

 

The Role of Oat Flour:

Oat flour is a fantastic choice for this recipe because it’s naturally gluten-free, easy to digest, and high in fiber. It adds a slight nuttiness to the brownies while helping to keep them soft and moist. Plus, oats are a great source of energy for active kids, keeping them fueled throughout the day.

 

Ingredients & Substitutions:

Spinach- This can be replaced with kale. If you are using frozen spinach, use about 1 cup of spinach instead of 1 1/2 cups.

Eggs- I don’t recommend replacing the eggs in this recipe.

Mozzarella- I used shredded mozzarella for this, but you can use any type of shredded cheese you prefer.

Oat Flour- Oat flour is recommended but it can be substituted with most flours. For example all-purpose, spelt, gluten-free, etc.

8×8 or 9′ square baking dish

Ingredients

Adjust Servings
1 1/2 cups spinach fresh or frozen
2 eggs
1/2 cup + more for sprinkling on top shredded mozzarella
1/4 cup oat flour
1 tsp baking powder

Directions

Preheat oven to 350F
Mark as complete

Roughly chop spinach, for younger babies you can chop it smaller
If you are using frozen spinach use 1 cup instead of 1 1/2 cups.

Add olive oil to heated pan, along with spinach and cook on high heat for 4-5 minutes till wilted, put to the side

In mixing bowl add eggs, mozzarella cheese, oat flour, baking powder and mix

Fold in spinach

Add parchment paper to 8x8 or 9' square baking dish or brush with oil and add your mixture

Sprinkle more shredded cheese on top and add to oven for 18-20 minutes

Notes

Storage instructions- can refrigerate for 3-4 days or freeze for up to 1 month
Reheating instructions- can reheat in toaster oven or microwave for about 30 seconds
